It is no secret that while chocolate is an enjoyable food, it should also be enjoyed in moderation. You probably don’t think of chocolate as being particularly healthy, due to its high sugar and fat content. However, while milk chocolate should probably be reserved for treat time, dark chocolate is something of a dark horse. It is calorific, yes, but is also packed full of good things which can bring notable health benefits. So rejoice, chocoholics! You can enjoy chocolate without the guilt. Dark chocolate can actually have a positive impact on your body.

Chocolate is a sweet treat that has found its way to supermarket shelves in nearly every single country around the world. It can be enjoyed in a variety of forms, from the simple chocolate bar to hot drinks, or if you’re feeling particularly extravagant, a chocolate fondue. Cocoa beans were being consumed as far back as 3000 BC; in Ecuador, archaeologist Michael Blake excavated the ceramic pots used by the Mayo-Chinchipe culture and discovered traces of theobromine (an alkaline present in cacao beans) and starch grains unique to the cacao tree. In its earliest origins, chocolate was consumed as a hot drink for ritualistic purposes, and later medicinal purposes. The chocolate bar we are familiar with today wasn’t produced until the 19thcentury, by the British chocolate company J. S. Fry & Sons in 1847.

Chocolate is a popular sweet treat derived from cocoa beans, which grow in the fruit of cacao trees near the equator, in Central and South America and Africa. On average, we eat about three million tonnes of these beans in the form of chocolate. To make the commercial chocolate we enjoy today, these beans are shelled before being fermented (to develop flavour) and dried out (to develop colour), then roasted. The roasting process produces cocoa nibs, which are then ground down into cocoa mass, or chocolate liquor. Finally, this aromatic chocolate liquor is combined with other ingredients, including sugar, milk, and lecithin. But did you know that some types of chocolate also contain caffeine?

Did you know that chocolate is best stored out of the fridge? Of course, people are always storing chocolate like that – especially when heat comes into play. We live in a hot climate – chocolate can melt.
You might have noticed that when you buy chocolate in the store it isn’t kept in the fridge – and according to the world’s best chocolatiers that is how the flavour is best maintained.
